Spinach-Cheese Chicken Rolls
- 6 chicken cutlets
- 2 eggs, beaten
- 1 c. flavored bread crumbs
- 2 (10 oz.) pkg. frozen spinach, chopped (1 pkg. could be used, too)
- 2 Tbsp. olive oil
- 16 oz. shredded Mozzarella, divided
- dash of pepper
- 1 tsp. chopped garlic
- 3 Tbsp. butter or margarine, melted
- Dip cutlets in egg and then bread crumbs; set aside.
- Cook spinach or microwave and drain well.
- Add oil, garlic and 8 ounces of the Mozzarella cheese.
- Grease bottom of oblong dish with 1 tablespoon of butter.
- Place approximately 2 tablespoons of spinach mixture at thin end of cutlet.
- Roll and place seam side down.
- Drizzle remaining butter over stuffed, rolled cutlets in dish.
- Place in 350u0b0 oven for 30 to 40 minutes.
- Remove pan from oven.
- Place remaining Mozzarella on cutlets.
- Bake another 5 minutes.
- Yields 4 servings.
