Spinach-Cheese Chicken Rolls

  1. Dip cutlets in egg and then bread crumbs; set aside.
  2. Cook spinach or microwave and drain well.
  3. Add oil, garlic and 8 ounces of the Mozzarella cheese.
  4. Grease bottom of oblong dish with 1 tablespoon of butter.
  5. Place approximately 2 tablespoons of spinach mixture at thin end of cutlet.
  6. Roll and place seam side down.
  7. Drizzle remaining butter over stuffed, rolled cutlets in dish.
  8. Place in 350u0b0 oven for 30 to 40 minutes.
  9. Remove pan from oven.
  10. Place remaining Mozzarella on cutlets.
  11. Bake another 5 minutes.
  12. Yields 4 servings.
