Black Bean Soup
- 2 slices of bacon
- 2 T olive oil
- 1 medium onion
- 3 cloves garlic
- 2 cans black beans, undrained
- 1 can whole tomatoes, undrained
- 3-4 cups chicken stock
- 1 T cumin
- 1 T chili powder
- 1 T cocoa powder
- 1 T oregano
- 2 bay leaves
- 1 chipotle chili in adobo
- handful of fresh cilantro
- salt to taste
- In heavy bottom sauce pan, fry bacon until brown. Add olive oil. Then add onions, scraping the brown bits from the bottom. Sauteed until onion are light brown. Add garlic. Saute another 2-3 minutes.
- Add beans, tomatoes, stock, cumin, chili powder, cocoa powder, oregano and bay. Bring to a boil then simmer for 20 minutes.
- Take off the heat and puree with immersion blender until smooth. Add cilantro and puree until it's incorporated.
- Add salt to taste.
