Italian Minestrone With Tortellini
- 1 1/2 lb. bulk sweet Italian sausage
- 1 c. chopped onion
- 6 c. beef broth
- 1/2 c. dry red wine
- 1 (1 lb.) can tomatoes (undrained)
- 2 c. thinly sliced carrots
- 1 c. thinly sliced celery
- 1 c. ketchup
- 1 tsp. Italian seasoning
- 2 cloves garlic, minced
- 2 c. sliced zucchini
- 1/2 lb. fresh meat or cheese filled tortellini
- 1 medium green pepper, diced
- 1/4 c. chopped fresh parsley
- grated Parmesan cheese
- In a 5-quart Dutch oven, brown sausage and drain.
- Add onion and saute until tender.
- Add beef broth, red wine, tomatoes, carrots, celery, ketchup, Italian seasoning and garlic.
- Bring to a boil; simmer, uncovered, for 30 minutes.
- Add zucchini, tortellini, green pepper and parsley.
- Simmer, covered, until tortellini are tender, 10 to 15 minutes.
- Sprinkle with Parmesan cheese before serving.
