Southern Style Minestrone
- 2/3 c. chopped onion
- 1 lb. ground chuck
- 1 (15 oz.) can mixed vegetables
- 1 (10 3/4 oz.) can cream of potato soup
- 1 (8 oz.) can tomato sauce
- 1 (14 1/2 oz.) can diced Italian-style tomatoes
- 1 c. uncooked macaroni
- 2 c. water
- Salt and black pepper, to taste
- Combine onion and ground beef in soup pot.
- Cook until meat has browned.
- Drain excess grease.
- Add remaining ingredients and bring to a boil.
- Reduce heat to medium and cover the pan.
- Cook for 8 to 10 minutes or until macaroni is tender.
- Stir occasionally to prevent sticking.
- I sometimes add a few drops of Tabasco sauce. I usually do not add salt because most of the canned products already have salt in them.
