Strawberry Mocha Cream Tartlets
- 4 c. sifted all-purpose flour
- 2 tsp. salt
- 1 1/2 c. vegetable shortening
- 2 pt. fresh strawberries
- light corn syrup
- 1/2 c. strong coffee
- 1/2 c. sugar
- 6 egg yolks
- 1 Tbsp. instant coffee powder
- 2 Tbsp. cocoa
- 1 c. softened sweet butter
- Combine the flour and salt in a bowl.
- Cut in the shortening until uniform but coarse.
- Sprinkle with 1/2 cup of water and toss with a fork, then press into a ball.
- Roll out half of the dough at a time on a lightly floured surface to 1/8-inch thickness.
- Cut into 3-inch circles, then fit inside 2 1/4-inch tart pans and prick with fork.
- Place on a baking sheet.
- Bake in a 425u0b0 oven for 10 minutes or until lightly browned.
- Cool and remove from tart pans.
