King Ranch Chicken
- 1 (2 or 3 lb.) boned chicken
- 1 medium chopped onion
- 3 Tbsp. margarine
- 1 c. chopped celery
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 c. chicken broth
- 1 can chopped green chilies
- 1 jar sliced pimento
- 1 doz. flour tortillas
- 2 c. shredded cheese (Cheddar and Monterey Jack)
- Brown onion and margarine.
- Add celery.
- Add soups, chicken broth, green chilies and pimento.
- Cut up chicken and add to mixture.
- Tear into pieces the flour tortillas.
- Put 1/2 tortillas into a greased 9 x 13-inch pan.
- Pour 1/2 the sauce mixture over tortillas.
- Cover with 1 cup shredded cheese.
- Add rest of tortillas and sauce.
- Top with remaining cheese and bake at 350u0b0 until bubbly and light brown, about 30 minutes.
