Chicken And Fennel Pizza
- -2 tsp extra-virgin olive oil
- -1 lb fennel bulb(s), quartered, cored and thinly sliced
- -1 red bell pepper, thinly sliced
- -8 oz boneless, skinless chicken breasts
- -16 oz premade pizza dough
- -4-8 oz mozzarella cheese (depending on how cheesy you want it)
- 1. Preheat oven as per pizza dough directions (usually 475 degrees F)
- 2. Heat oil in a large nonstick skillet over medium heat. Add fennel and bell pepper and cook, stirring often, until the vegetables begin to soften, about 5 minutes. Add chicken and cook another 5 minutes, stirring often, until the vegetables are tender and the chicken is cooked through.
- 3. Prep and form dough into pizza base and spread cooked ingredients over surface. Top with mozzarella cheese and bake until cheese is lightly browned (about 15-20 minutes).
