Baked Garlic Appetizer
- 4 large garlic heads, unpeeled
- 2.5 cupls butter thinly sliced
- .25 cup olive oil
- 2 to 2.5 cups chicken broth
- 2 c sundried tomatoes
- .75 tbs dried fines herbes
- pepper
- 6 oz goat cheese
- fresh basil
- Preheat oven to 375 degrees. Slice 1/4 inch off tops of garlic heads (opposite root end). Remove any loose outer paper skin. Place garlic cut side up in medium baking dish. Arrange butter slices evenly over garlic. Pour oil over. Add 2 cups broth to dish. Arrange sundried tomatoes around garlic. Sprinkle fines herbes over. Season w pepper. Bake until garlic and sundried tomatoes are tender, basting with broth every 15 minutesa and adding more broth if necessary to maintain some sauce in pan, about 1 hour 15 minutes. Arrange goat cheese around pan and continue baking until cheese is almost melted, about 10 minutes. Garnish w basil. Serve w Italian bread.
