Spicy Vegetables And Sausage
- 2 Tbsp. vegetable oil
- 2 medium onions, sliced and separated into rings
- 3 green peppers, cut into strips
- 2 garlic cloves, crushed
- 1 (28 oz.) can whole tomatoes, drained and chopped, or 3 large fresh tomatoes, peeled and cubed
- 3 medium zucchini, thinly sliced
- 1 medium eggplant, peeled and diced
- 2 Tbsp. chopped fresh parsley
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 (6 oz.) can tomato paste
- 1/2 c. dry white wine
- 1/2 tsp. sugar
- 1/2 tsp. dried basil leaves
- 1/4 tsp. dried marjoram leaves
- 1/4 tsp. seasoned pepper
- 1 lb. Polish sausage, cut into 1 inch slices
- Heat oil to 375u0b0 in an electric skillet.
- Add onions, green peppers, garlic, tomatoes, zucchini, eggplant, parsley, salt and pepper; saute for 10 minutes.
- Stir in tomato paste, wine, sugar, basil, marjoram and seasoned pepper.
- Add sausage; cover and cook until sausage is hot and vegetables are crisp-tender (about 5 minutes).
- Makes 8 servings.
