Oprah Kale And Farro Soup

  1. heat olive oil and add onion and leek and cook ~ 4 minutes
  2. add carrots, celery, parsnips, and cook until beginning to soften (~4 mins)
  3. add garlic and cook 1 minute
  4. stir in farro, squash, veggie broth, tomatoes, parmesan rind, bay leaf, thyme, salt and pepper
  5. bring to a light simmer and cook partially covered until farro and squash are tender, 30-35 mins
  6. stir in kale and cook until tender... 2 minutes.. ck if need more salt/pepper
  7. serve with parmesan cheese
