Sweet Sour Pork
- 1 1/2 lb. lean pork, cubed
- 2 Tbsp. fat
- 1/4 c. water
- 2 Tbsp. cornstarch
- 1/2 tsp. salt
- 1/4 c. brown sugar
- 1/2 to 1/3 c. white vinegar
- 1 c. pineapple juice
- 3/4 c. bell pepper, cut in strips
- 1/4 c. chopped onion
- 1/4 c. green onion, sliced
- 1 (No. 2) can pineapple chunks
- 1 Tbsp. soy sauce (or to taste)
- Drain pineapple for juice and set aside.
- Brown pork in hot fat, cover with water, simmer 45 to 60 minutes.
- In separate pan, combine cornstarch, salt, sugar, vinegar, pineapple juice and soy sauce.
- Cook until thick stirring constantly.
- Pour over hot pork. Let stand at least 10 minutes.
- Add bell pepper, onion and pineapple chunks.
- Heat 2 or 3 minutes.
- Excellent over plain rice. Sauce may be used on other meats.
