Fantastic (And Healthy!) Corn Muffins
- 1/4 cup crushed All-Bran cereal
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1 1/3 cup corn meal
- 2 tbsp dark brown sugar
- 4 tsp baking powder
- 1/2 tsp sea salt
- 1/2 cup finely chopped hot pepper
- 1/2 cup plus a dash of egg substitute
- 1 cup evaporated milk
- 4 tbsp olive oil
- Preheat oven to 400 F.
- Mix all dry ingredients in a large bowl, then stir in hot pepper. Mix in the egg substitute, evaporated milk, and olive oil gently but well.
- In a muffin pan, fill each depression 3/4 of the way with the batter. Bake 15 minutes, then sprinkle grated cheese (I used cheddar and mozzarella) on top and return to oven and bake for another 4 minutes. Broil for 1 minute, remove from oven, allow to sit in pan for 5 minutes, and then remove and let cool on a wire rack.
