Fantastic (And Healthy!) Corn Muffins

  1. Preheat oven to 400 F.
  2. Mix all dry ingredients in a large bowl, then stir in hot pepper. Mix in the egg substitute, evaporated milk, and olive oil gently but well.
  3. In a muffin pan, fill each depression 3/4 of the way with the batter. Bake 15 minutes, then sprinkle grated cheese (I used cheddar and mozzarella) on top and return to oven and bake for another 4 minutes. Broil for 1 minute, remove from oven, allow to sit in pan for 5 minutes, and then remove and let cool on a wire rack.
