Broccoli Leek Crimini Mushroom Gorganzola Pie

  1. Preheat oven 400 degrees F
  2. Butter pie dish with 1tsp. Butter place pie crust in dish. Line top of crust with parcchment and fill with beans blind bake for 15 min.
  3. Remove paper and beans & cool down.
  4. cook broccoli in large pot boling water for 2 minutes. Drain in colander rinse well with cold water & leave to dry.
  5. Melt butter in pan fry leeks mushrooms on gentle heat for 10 min.
  6. Add cream water chives thyme mustard salt pepper. Stir well & remove from heat.
  7. Spread leek mixture over bottom pie crust. Scatter broccoli on top gently press into leek mix. Top with gorgonzola.
  8. Bake for 30 min. Or until golden brown. Allow to cool and set before slicing from pan.
