- 1 1/2 cup Contadina(R) Diced Tomatoes
- 1/2 cup Contadina(R) Tomato Sauce
- 4 6oz pieces Tilapia (or other flaky white fish)
- 4 oz medium shrimp, peeled and deveined
- 4 oz lump crabmeat
- 1 tsp fresh lemon juice
- 1/2 tsp coarse salt
- 1/4 tsp crushed red pepper
- 3 oz sliced almonds
- 4 tbsp unsalted butter, softened
- 1 tsp fresh lemon zest
- 1/2 cup feta cheese, crumbled
- Minced Italian parsley to garnish
- 1.tlace fish on a baking sheet lined with parchment paper.
- 2.tn a medium mixing bowl gently combine shrimp, crab, lemon juice, salt and pepper. Spoon evenly on top of fish pieces.
- 3.tn a small mixing bowl combine almonds, butter and lemon zest. Place 1/4 of this mixture on each fish piece. Top with a mixture of tomatoes and sauce.
- 4.take in a 400 degree oven 5 minutes. Top with the feta cheese and bake an additional 3 to 5 minutes or until cheese softened and fish cooked through.
- 5.temove and plate then top with parsley.
