Curried Chick Peas
- 1 1/2 cup dry chick peas: soak overnight then boil to soft.
- 1 can chopped tomatoes
- 1 large onion
- 2 cloves garlic
- 1 green pepper (optional)
- 1 chili pepper (optional)
- 1 Tbs madras curry powder
- 1 Tbs of Turmeric
- cilantro for topping it off
- lemon juice (optional)
- EVOO
- Saute onion, peppers and garlic slightly, add spices and saute until onion is transparent
- Add tomatoes, cook about 3 minutes
- Add chick peas, cover and turn heat down to low, about 15 minutes
- Remove 1C of the mixture and blend it in blender, food processor or with an emersion blender. Add this back into the rest.
- Serve topped with cilantro and lemon juice.
