Cilantro Lime Chicken
- 3 boneless, skinless chicken breasts
- 2 limes zested
- 1/2 cup lime juice
- 4 tablespoons olive oil
- 2 oz tequila
- 1/2 cup water
- 1/2 teaspoon ground cumin
- 1/4 teaspoon crushed red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon fresh ground pepper
- 1/4 cup fresh cilantro, chopped
- 2 cloves of garlic, pressed
- 1/2 cup onion, red finely chopped
- 1.Place chicken breasts in slow cooker
- 2.Prepare the remaining ingredients as stated above and pour over chicken breasts
- 3.Cook on high for 1 hour
- 4.Turn chicken breasts over and turn slow cooker to low
- 5.Cook for another 2 hours or until tender and easily tears apart
- 6.Separate using tongs or forks and pour cooking juice over it to retain moisture and flavor
