Taco Pie

  1. Preheat oven to 400
  2. Brown ground beef. Add taco seasoning and water. Lower heat & simmer 5 minutes.
  3. Steam Peppers in microwave or steamer. Toss with spices. Stir peppers into ground beef.
  4. Combine refried beans and salsa.
  5. Spread 1/2 of the bean/salsa mix into bottom and up sides of pie crust. Spread 1/2 of beef/peppers mix on top. Cover with cheese.
  6. Repeat layers in the same order.
  7. Top with 2nd pie crust and crimp edges.
  8. Cut 4 slices into top of pie.
  9. Place on cookie sheet and bake 15 minutes. Cover edge of pie with foil and bake another 15-20 minutes.
  10. Serve topped with black olives, additional cheese, sour cream and any other appropriate toppings like lettuce or tomato.
  11. **You can also use fresh peppers and onion. Cut peppers into slices or chunks, and dice onion. You can then either saute them in the same pan you made the beef in, or steam them, whatever your preference for making them soft, but they MUST be cooked before going into the pie. Drain off any liquid before adding spices and mixing with beef.
