Spiral Sandwich Roll-Ups(Students' Favorite Demonstration Request)
- 1 (15-inch) sesame seed Armenian cracker bread (lahvosh; found in refrigerated bread section in stores that carry Middle Eastern products; I got mine from "Harry's")
- 1/2 (8 oz.) pkg. light cream cheese, softened
- 1 Tbsp. snipped fresh basil or 1 tsp. dried basil, crushed
- 1 Tbsp. snipped fresh oregano or 1 tsp. dried oregano, crushed
- 1/4 tsp. salt
- 1/4 tsp. garlic powder
- 1/8 tsp. pepper
- 4 oz. thinly sliced, fully cooked smoked turkey or ham
- 1 large tomato, very thinly sliced
- 2 oz. very thinly sliced Monterey Jack or Swiss cheese
- 1 large romaine lettuce leaf, rib removed (or leaf lettuce)
- Dampen cracker bread on both sides by holding the bread briefly under gently running cold water.
- Place the moistened bread between 2 damp, clean towels, making sure the sesame seed is facing down.
- Let the bread stand at room temperature about 1 hour or until it has softened enough to roll.
