Grate Balls Of Fire: Grilled Meatballs Recipe
- 1 pound ground beef
- 1 pound ground pork
- 2 Bratwurst Italian sausages
- 2 cups stale Italian bread crumbs
- 1 8oz pkg fancy shredded 6 cheeses Italian cheese
- 2 cloves garlic, minced
- 2 eggs
- 1 tablespoon fresh chopped Italian flat leaf parsley
- 1 tablespoon fresh chopped basil
- 1-1 1/2 cups lukewarm water
- 1 cup olive oil
- 1 tablespoon of Kosher salt (to taste)
- Pepper to taste
- 1. Remove sausage casing from bratwurst
- 2. In a large mixing bowl, combine beef, pork, bratwurst, garlic, eggs, cheese, parsley, basil, olive oil, salt and pepper
- 3. Pour 3/4 cup of water into bread crumbs and allow to soak for 2 minutes
- 4. Add to meat mixture and begin kneading mixture together
- 5. Slowly add the remaining 3/4 cups of water and kneed thoroughly to combine all ingredients
- 6. Form mixture into golf ball sized or large meatballs and place on cookie sheet
- Grilling:
- Place on grill on LOW temperature and keep lid closed (ideally dome temp. should be at 350F). Rotate meatballs every 2-3 minutes and remove when done (be careful not to overcook).
