Cucumber,Tomato & Pineapple Salad With Asian Dressing

• 1 large garlic clove
• 1/4tsp salt
• 2tbsp fresh lime juice
• 1tbsp sugar
• 2tbsp vegetable oil
• 1(2inch long)fresh serrano @ jalapeno chile,minced,including seeds
• 1/4-1/2tsp asian fish sauce
• 1/2seedless cucumber(often plastic-wrapped)halved lengthwise,then thinly sliced crosswise
• 1/2pineapple,peeled,quartered lengthwise,cored,then sliced crosswide1/4 inch thick(2cups)
• 2medium tomatoes(1lb total),cut into 1/2inch thick wedges
• 1/4cup coarsley chopped fresh mint
• 1/2cup coarsley fresh cilantro

1. 1)mince garlic,then smash to a paste with salt using sideof a large heavy knife.
2. 2)whisk together lime juice & sugar in a large bowl until sugar is dissolved,then whisk in oil,garlic paste,chile & fish sauce(to taste).add remaining ingredients,tossing to coat & add salt to taste.
