Black Bean Salsa

  1. set 3 cups of black beans to boils with 4 tbls spoons of rendered pork fat, 5 minced garlics, salt to taste. Boil for about 2.5 hours. Drain when done set beans aside.
  2. salsa:
  3. roast 4 to5 whole jalapenos then chop to desired size
  4. Chop 1half purple onion into small pieces
  5. chop 2 hand full of cilantro
  6. dice 8 large roma tomatoes to medium size
  7. Add all above ingredients including beans into large bowl
  8. Squeeze juice of 3 to 4 limes
  9. add olive oil 6 to 7 tables spoons
  10. salt and pepper to taste
  11. mix and chill then serve with chips.
