Black Bean Salsa
- black beans
- garlic
- rendered pork fat
- salt
- pepper
- jalapenos
- cilantro
- purple onions
- olive oil
- roma tomatoes
- limes
- set 3 cups of black beans to boils with 4 tbls spoons of rendered pork fat, 5 minced garlics, salt to taste. Boil for about 2.5 hours. Drain when done set beans aside.
- salsa:
- roast 4 to5 whole jalapenos then chop to desired size
- Chop 1half purple onion into small pieces
- chop 2 hand full of cilantro
- dice 8 large roma tomatoes to medium size
- Add all above ingredients including beans into large bowl
- Squeeze juice of 3 to 4 limes
- add olive oil 6 to 7 tables spoons
- salt and pepper to taste
- mix and chill then serve with chips.
