Good 4 U Pumpkin Cookies

  1. Preheat oven to 350 degrees.
  2. Grease cookie sheet with canola spray.
  3. Cream the margarine and sugar substitute together until light and fluffy.
  4. Beat in egg, applesauce, yogurt, and vanilla.
  5. Sift all dry ingredients in a separate bowl and then add to the creamed mixture until thoroughly blended.
  6. Add optional chocolate chips and/or nuts.
  7. Drop by teaspoonfulls onto prepared cookie sheet.
  8. These cookies do not spread so you can probably get 15 on a regular pan.
  9. Bake at 350 for 15 minutes or until lightly browned on the bottom.
  10. Remove from cookie sheets while still warm.
  11. Cool on racks. Freezes well.
