Good 4 U Pumpkin Cookies
- 1/2 cup "good" margarine,
- 1 3/4 Cups Equivalent Sugar Substitute,
- 1 egg,
- 1 cup cooked pumpkin,
- 1/2 cup unsweetened applesauce,
- 2 Tblsp Plain Non-Fat Yogurt,
- 1 1/4 tsp vanilla extract,
- 1 1/4 Cups Whole wheat flour,
- 1 1/4 Cups Soy Flour,
- 3/4 Cup oatmeal,
- 1 1/4 tsp baking soda,
- 1 1/4 tsp baking powder,
- 3/4 tsp salt,
- 1 1/4 tsp Nutmeg,
- 1 1/4 tsp Cinnamon,
- 1 to 1 1/2 cups semi sweet ,chocolate chips (Optional due to the sugar in the chips),
- 1/2 Cup Chopped roasted nuts
- Preheat oven to 350 degrees.
- Grease cookie sheet with canola spray.
- Cream the margarine and sugar substitute together until light and fluffy.
- Beat in egg, applesauce, yogurt, and vanilla.
- Sift all dry ingredients in a separate bowl and then add to the creamed mixture until thoroughly blended.
- Add optional chocolate chips and/or nuts.
- Drop by teaspoonfulls onto prepared cookie sheet.
- These cookies do not spread so you can probably get 15 on a regular pan.
- Bake at 350 for 15 minutes or until lightly browned on the bottom.
- Remove from cookie sheets while still warm.
- Cool on racks. Freezes well.
