Minestrone Soup
- 1 qt. chicken stock
- 3 qt. water
- 1 Tbsp. beef bouillon
- 1 Tbsp. chicken bouillon
- 1 lb. cooked ham, diced
- 3 Tbsp. oil
- 1 clove garlic, minced
- 1 c. chopped onion
- 1 c. chopped parsley
- 1/2 tsp. basil
- 1 bay leaf
- 1/2 tsp. pepper
- 1 c. celery, diced
- 2 c. shredded cabbage
- 1 c. carrots, diced
- 1 1/2 c. green beans
- 1 c. rutabaga, diced
- 2 c. potatoes, diced
- 3 1/2 c. canned tomatoes and juice
- 1 c. frozen peas
- 2 c. red kidney beans
- 1 1/2 c. broken raw spaghetti
- In a large stock pot, bring to boil chicken stock, water, beef bouillon, chicken bouillon and cooked ham.
- Saute in 3 tablespoons oil and add to meat and stock:
- garlic, onion, parsley, basil, bay leaf and pepper.
- Add celery, cabbage, carrots, green beans, rutabaga, potatoes and canned tomatoes and juice.
- Simmer 1 hour covered.
- Add frozen peas, red kidney beans and spaghetti.
- Simmer 30 minutes.
- Remove bay leaf.
