Baked Fish
- 3/4 c. chopped onion
- 2 cloves garlic, minced
- 1 Tbsp. olive oil
- 1 Tbsp. cornstarch
- 1 (16 oz.) can tomatoes
- salt (optional)
- 1/3 c. sliced stuffed olives
- 1 tsp. chopped red or green chili pepper
- 1 1/2 lb. flounder fillets or other mild fish
- 1 Tbsp. fresh lemon juice
- Preheat oven to 375u0b0.
- In medium skillet, saute onion and garlic in olive oil until soft.
- Mix in cornstarch.
- Add tomatoes and their juice; mix until well blended.
- Cook over medium-high heat until sauce thickens.
- Stir in olives and chili pepper. Spoon half the sauce into a baking pan large enough to hold the fillets in one layer.
- Place fish over sauce; sprinkle with lemon juice (salt optional).
- Cover with remaining sauce; bake for 10 minutes, or until fillets flake easily.
- Serves 6.
