Gluten Free Oatmeal Cookies

  1. PREHEAT oven to 375 degs.
  2. GREASE cookie sheet(s)
  3. COMBINE flours, baking soda, baking powder, xantham gum and salt in medium bowl.
  4. COMBINE butter/margarine, sugar, eggs, vanilla and water in large bowl.
  5. BEAT until creamy.
  6. ADD dry ingredient mixture gradually.
  7. STIR in oats and morsels/nuts.
  8. DROP by tablespoonfuls onto cookie sheet(s) covered with parchment paper.
  9. BAKE for 10 - 12 minutes.
  10. COOL slightly, then remove cookies onto wire racks.
