Gluten Free Oatmeal Cookies
- .75 C Rice Flour
- .75 C Bean Flour
- 1 tsp Baking Soda
- 2 tsp Xantham Gum
- 1 tsp Salt
- 1 C Butter or Margarine
- 1.5 C Brown Sugar - packed
- 2 Eggs (or equivilant EnerG Egg Replacer)
- 1 T Water
- .5 tsp Vanilla Extract
- 1.5 C Quick Oats - uncooked
- Optional Additions-
- 1 C Butterscotch Morsels
- or
- 1 C Chocolate Morsels
- or
- .5 C Morsels and .5 C Walnuts or Pecans
- or
- .5 C Morsels and .5 C raisins or dried cranberries
- PREHEAT oven to 375 degs.
- GREASE cookie sheet(s)
- COMBINE flours, baking soda, baking powder, xantham gum and salt in medium bowl.
- COMBINE butter/margarine, sugar, eggs, vanilla and water in large bowl.
- BEAT until creamy.
- ADD dry ingredient mixture gradually.
- STIR in oats and morsels/nuts.
- DROP by tablespoonfuls onto cookie sheet(s) covered with parchment paper.
- BAKE for 10 - 12 minutes.
- COOL slightly, then remove cookies onto wire racks.
