Jam Thumprints
- 3/4 pounds (3 sticks) butter, room temp
- 1 cup sugar
- 1 tsp vanilla
- 3 1/2 cups flour
- 1/4 tsp kosher salt
- 1 egg, beaten with 1 TBS water, for egg wash
- 7 ounces flaked coconut
- raspberry or apricot jam
- cream butter and sugar until combined then add vanilla.
- in separate bowl, sift together flour and salt.
- add dry ingredients to creamed mixture and mix until dough comes together. dump on floured board and roll together into flat disk. wrap in plastic and chill for 30 min.
- roll dough into 1 1/4" balls. dip each ballinto egg wash and then roll in coconut.
- place on ungreased cookie sheet and press a light indentation into top of each. drop 1/4 tsp of jam into each indentation. bake for 20-25 minutes until coconut is golden brown.
- cool and serve
