Larry Brown'S Vegetable Lasagna

- Ingredients:
- t cups grated zucchini
- t cups grated carrots
- t tablespoon olive oil
- t large eggs
- t cup grated parmesan cheese
- t0 ounce fresh leaf spinach
- t1/2 cups marinara sauce or 1 jar of Raos
- t/2 lb lasagna noodle
- t ounces shredded provolone cheese
- Directions:
- 1.taute zucchini, carrots, and spinach separately in 1/2 tbls oil each until tender
- 2.tombine eggs and parmesan and provolone.
- 3.tlace each veggie in a bowl and add 1/4 of egg-cheese mixture to the 3 vegetables.
- 4.tover a 9 inch square baking dish with marinara sauce.
- 5.tover sauce with noodles.
- 6.tpread spinach over noodles; then, carrot mix; then, zucchini.
- 7.top with noodles, then marinara sauce.
- 8.tover tightly with foil.
- 9.take at 350* for 30 minutes.
- 10.temove foil and sprinkle with remaining egg-cheese mix.
- 11.take 10 minutes more, uncovered.
- 12.tet rest 10 minutes before cutting.
