Healthy Carrot Raisin Drop Cookies
- 2 cups rolled oats
- 1 1/2 cups brown sugar
- 1 cup margarine softened
- 1 cup splenda
- 1 tsp vanilla
- 3 egg whites
- 1 1/2 cups flour
- 5 tsp baking powder
- 1 tsp cinnamon
- 1 cup milled flax seeds
- 1 cup unprocessed bran
- 2 cups shredded carrots
- 1 cup raisins
- 1. Mix sugar, margarine, vanilla, egg whites, and cinnamon until creamy.
- 2. Add carrots and mix in raisins by hand with spoon.
- 3. Drop by large spoonfuls onto greased, sprayed, or silicone-lined cookie sheets.
- 4. Bake in preheated 325 oven for approximate 10 minutes. Press finger on top of cookie, if it springs back like a cake, they're done!
