Easy Bruschetta
- 1 loaf french bread
- 4 cooked lasagna pasta sheets
- 3 medium slicing tomatoes
- 2 plum tomatoes
- 6 slices mozzarella cheese
- 1 cup shredded parmesan cheese
- 4 T extra virgin olive oil
- a few sprigs fresh basil
- fresh italian parsley
- preheat oven to 350
- *slice the three tomatoes very thin 1/8". set aside.
- *in a food processor puree plum tomatoes, olive oil, and basil.
- *slice french bread lengthwise open to form two halves, cut ends upward facing.
- *spread the puree on both halves of the bread.
- *place 2 lasagna noodles on each half bread.
- *place half of the tomatoes on top of the lasagna noodles.
- *place 3 slices of mozzarella on each half, covering the length of the bread.
- *place the remaining tomato slices on the bread.
- *generously sprinkle 1/2 cup of parmesan for each half loaf.
- *bake on cookie sheet for aprox. 10-15 minutes until cheese is melty and tomatoes are soft, then broil quickly a few minutes until extra hot and bubbly.
- garnish with parsley, if desired.
