Easy Bruschetta

  1. preheat oven to 350
  2. *slice the three tomatoes very thin 1/8". set aside.
  3. *in a food processor puree plum tomatoes, olive oil, and basil.
  4. *slice french bread lengthwise open to form two halves, cut ends upward facing.
  5. *spread the puree on both halves of the bread.
  6. *place 2 lasagna noodles on each half bread.
  7. *place half of the tomatoes on top of the lasagna noodles.
  8. *place 3 slices of mozzarella on each half, covering the length of the bread.
  9. *place the remaining tomato slices on the bread.
  10. *generously sprinkle 1/2 cup of parmesan for each half loaf.
  11. *bake on cookie sheet for aprox. 10-15 minutes until cheese is melty and tomatoes are soft, then broil quickly a few minutes until extra hot and bubbly.
  12. garnish with parsley, if desired.
