Apple Feta Lentil Salad
- 2 cups lentils (any firmer variety) cooked till tender.
- 2 chopped crisp green apples (1/2 cubes) Toss apples with 1 Tab lemon juice to prevent browning.
- 1/2 red onion finely chopped
- 3/4 cup creamy feta or goat cheese crumbled
- 1 cup chopped arugula
- Vinaigrette:
- 1/3 cup cold pressed, extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1 Tbsp. maple syrup
- 1 Tbsp. strong mustard
- 2 tsp. salt
- 2 tsp. pepper
- 1 tsp. ground cumin
- 1/2 tsp. turmeric
- 1/2 tsp. ground coriander
- 1/2 tsp ground cardamom
- 1/4 tsp. cayenne pepper
- 1/4 tsp. ground cloves
- 1/4 tsp. freshly grated nutmeg
- 1/4 tsp. ground cinnamon
- Cook lentils and allow them to cool to room temperature.
- Mix all ingredients for vinaigrette in a jar and shake vigorously.
- Toss all ingredients together in a bowl. Serve cool or at room temperature.
