Migas (Chilaquiles)
- Corn tortillas
- Eggs
- Bacon or chorizo
- Tomato, diced
- Onion, diced
- Cilantro, chopped
- Cheese, shredded, any kind
- Oil for frying
- Salt
- Pepper
- Heat a large pan to medium heat.
- Cut or tear tortillas into 1 inch pieces and set aside.
- Cut bacon into pieces no larger than an inch and fry in heated pan. If using chorizo, take out of casing beforing cooking in pan. Cook just until done and remove from pan. Reserve all drippings from the bacon.
- Fry tortilla pieces in drippings making sure to add more oil if tortilla pieces are not completely coated. If using chorizo, oil is nescessary. After 2-3 minutes add onions. Fry tortillas with onions until desired crispness and drain all excess oil from pan.
- Add tomatoes, eggs and bacon or chorizo, stir to combine. Cook until eggs have reached desired doneness.
- Sprinkle cheese and cover to melt. Salt, pepper and cilantro to taste.
