Sesame Soba Noodle Salad (Vegan)

  1. Fill a medium saucepan with water and a generous pinch of salt. Bring water to a boil over high heat and add bite-sized broccoli.
  2. Boil for 1 minute and then remove. Leave the water in the pan.
  3. Once the water has returned to a rolling boil, cook the soba noodles as per package directions.
  4. While noodles are boiling, prepare the other ingredients. Grate the ginger and carrots. Mince the garlic. Thinly slice the mushrooms, bell pepper, and green onions. Shred the red cabbage.
  5. Once the noodles are done, drain immediately and rinse with cold water.
  6. Drizzle noodles with a tablespoon of toasted sesame oil to prevent them sticking together.
  7. Mix the dressing. Mix the oil, lime juice, ginger, garlic, tamari or soy sauce, maple syrup or other sweetener, Sriracha,and peanut butter together in a small bowl.
  8. Divide the dressing into a container of your choice. Divide up the vegetables then the noodles.
  9. Refrigerate until you are ready to eat. Serve by dumping the noode salad into a bowl and stirring together. Enjoy!
