Date Pinwheel Cookies
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup brown Sugar
- 1 egg
- 2 cup flour
- 1/2 teaspoon soda
- 1/2 teaspoon salt
- 2 teaspoon cinnamon
- Filling:
- 6 1/2 oz dates, cut up
- 2 cup water
- 1/2 cup chopped walnuts
- 1/3 cup sugar
- Cream butter and sugars together until light and fluffy, add egg and beat well. Sift together flour, soda, salt, and cinnamon. Stir into creamed mixture and blend well. Chill dough while you make and cool filling.
- Filling: Combine dates, sugar, and water. Cook over medium heat, stirring occasionally until jam like. Cool. Stir in chopped nuts.
- Roll out dough on floured board into a rectangle 1/4" thick. Spread with filling. Roll up jelly-roll fashion. Wrap in waxed paper. Chill overnight. Slice 1/3" thick, place on greased cookie sheet. Bake at 375 degrees for 10-12 minutes. Cool on a wire rack.
