Baked Rice Casserole
- Preheat oven to 375 F.
- 1 1/2 cups rice
- pinch salt
- 3 cups water
- In a heavy saucepan, combine rice, water and salt and cook until rice is done.
- 2 T butter
- 1/2 pound mushrooms
- 1 small onion, chopped
- In a medium skillet, melt butter, then saute mushrooms and onions over moderate heat until onion is soft.
- 1 cup sour cream
- 1 cup grated Jack cheese
- 1 T lemon juice
- 2 T chopped parsley (or cilantro)
- 1/2 tsp thyme
- 1/2 tsp Tabasco
- In a large mixing bowl, combine remaining ingredients. Add rice and vegetables and mix well. Turn into a greased 2 quart casserole. Smooth the top. Bake, covered, for 35 minutes.
- Prep time: 30 minutes
- Cook time: 35 minutes
