Shrimp With Gravy Over Mashed Potatoes
- 1# med. shrimp shell & devein
- 3 sm green onions, cut into 1-2" slivers lenthwise
- 4-5 med fresh shitake mushrooms, chopped
- 1/2 c white wine
- 1 c fish stock (from boullion)
- garlic or tarragon vinegar
- 2 tsp olive oil
- 2 handfuls of washed baby spinach leaves
- 1/2 carrot, shredded
- 1 Tbs cornstarch
- 1/2 tsp tarragon, dried
- 1/2 tsp fresh ginger, grated
- 2-3 cloves garlic, chopped
- Mashed Potatoes
- Sprinkle shrimp with vinegar, salt and fresh ground pepper. Sit aside to marinate while preparing vegetables. Heat oil in med skillet till hot. Add green onion, shitakes, garlic and ginger. Cook over med high heat 2-3 minutes. Add shrimp and cook till just pink about 3 minutes. Remove shrimp mix to bowl and keep warm. Add wine, fish stock & tarragon scraping up any brown bits from pan. Reduce 10 - 15 minutes. Mix cornstarch with a little reduced stock in small bowl. Turn heat to med-low. Return shrimp mix to pan and add spinach and carrot. Cook 1-2 minutes till spinach wilts. Add cornstarch mix and stir till slightly thickened. Place mashed potatoes in center of plate and make a well. Fill till overflowing w/ shrimp & gravy.
