Triple Sss Chili
- 2 T. olive oil
- 1 large sweet onion - chopped
- 1 C. chopped carrots
- 5 cloves garlic - chopped
- 2 lbs. ground grass-fed beef
- 1 large jalapeno - chopped
- 1 40 oz. can Brooks chili beans and sauce (hot)
- 1 14 oz. can chopped tomatoes and sauce
- 3.5 oz. canned chipotle peppers in adobo sauce - chopped
- 1 T. liquid smoke
- 2 T. brown sugar
- 1/2 C. chipotle sauce
- 2 T. ground cumin
- 1 T. salt
- 1 T. ground pepper
- In a dutch oven, saute onion, garlic and carrots in olive oil until tender. Add jalapeno and beef and cook until brown. Add remainder of ingrediants, bring to boil and gently simmer 1.5 to 2 hours. Adjust liquid smoke for smokiness, brown sugar for sweetness, chipotle peppers in adobo sauce for spice.
