Easy Rum Cake
- 1 cup pecans or walnuts -- chopped
- 1 package yellow cake mix
- 1 package instant vanilla pudding mix
- 4 each eggs
- 1/2 cup cold water
- 1/2 cup oil
- 1/2 cup dark rum
- GLAZE frosting
- 1/4 cup butter
- 1/4 cup water
- 1 cup granulated sugar
- 1/2 cup dark rum
- Grease and flour bundt or tube pan. Preheat oven to 325*F.
- Sprinkle nuts over bottom of pan.
- Mix all remaining cake ingredients together. Pour batter over nuts.
- Bake at 325*F for 1 hour. Cool. Invert on serving plate.
- Prick top of cake. Drizzle and smooth glaze evenly over to and sides,
- Repeat until glaze is used up.
- For Glaze: melt butter in saucepan. Stir in water and sugar. Boil 5 minutes, stirring constantly. Remove from heat. Stir in rum.
