Chefs Salad In Pita
- 4 pita breads, pref. whole wheat
- Dressing-
- 2 T red wine vinegar
- 1 T olive oil
- 1 T cold water
- 1/4 t. paprika
- 1/4 t. salt
- 1 small garlic clove, minced
- pinch of thyme & oregano
- freshly ground pepper
- Salad
- 4 cups loosely packed salad greens, bite sized
- 1 cup broccoli & caulif. steamed and cooled, chopped small
- 1/2 c. julienned cucumber
- 1/2 c. red onion, chopped
- 1/2 cup each of cherry tomato halves and shredded peeled carrot
- 1 oz. each of cured ham or turkey and swiss cheese strips
- Preheat oven to 350 degrees.
- Wrap pita in foil and warm 5 minutes.
- Whisk dressing together. Add to salad and toss well.
- Cut 1" off edge of pita, open and spoon salad in. Serve immediately.
