Spicy Apple Walnut Loaf
- 3 c. all-purpose flour, sifted
- 1 1/2 tsp. baking soda
- 1 1/2 tsp. allspice
- 3/4 tsp. nutmeg
- 1 1/2 tsp. cinnamon
- 1/4 tsp. ground cloves
- 3/4 c. shortening
- 1 c. brown sugar
- 3 eggs
- 1 1/2 tsp. vanilla
- 1 1/2 c. shredded apple, peeled
- 3 Tbsp. cider vinegar
- 3/4 c. walnuts, chopped
- Mix and sift flour, baking soda and spices.
- Cream shortening and sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Add vanilla.
- Stir in flour mixture, alternating with the apples and the 3 tablespoons of cider vinegar, mixed with the water to make 3/4 cup of the vinegar liquid.
- Stir in walnuts. Pour into greased 11 x 4 x 2-inch loaf pan and bake at 350u0b0 for 1 1/2 hours or until done.
- Cool.
- Makes one loaf.
