Adam'S Black Bean Chili
- 1 Onion (chopped)
- 5 Cloves Garlic (minced)
- 4 tbsp Olive Oil
- 1 tbsp Balsamic Vinegar
- 1 tsp Mesquite Liquid Smoke
- 1/4 cup BBQ Sauce (optional)
- 2 cans Black Beans (rinsed well)
- 2 4oz cans Diced Green Chilies
- 2 15oz cans Dices Tomatoes
- 1 cup Vegetable Stock (or chicken stock, base, broth, etc)
- 1 cup Corn (frozen or fresh)
- 5 tbsp Chili Powder
- 3 tbsp Ground Cumin
- 1 tsp Paprika Powder
- 1 Jalepeno (optional to make spicy)
- 1/4 bunch chopped Cilantro
- Masa Harina (optional)
- Shredded Cheese
- Sliced Lime
- Greek Yogurt (plain) or Sour Cream
- (Grilled chicken or ground meat can be added if desired)
- Saute onion and garlic in olive oil until caramelized (5 min or so).
- Add balsamic vinegar and liquid smoke and stir 1 min.
- Add black beans, green chilies, BBQ sauce, tomatoes, vegetable stock, corn, spices, and jalapeno and bring to a boil. Simmer for 15+ minutes. Masa Harina can be added for desired thickness.
- Stir in cilantro.
- Garnish with cheese, lime and yogurt or sour cream.
