Chicken Feta Pasta Salad
- Campanelle - or your Choice of pasta
- Feta - diced or crumbled
- Canned diced tomatoes (with chilies if you like)
- Roast Chicken Breast Shredded (I buy a whole roasted chicken from the super market and make multiple dishes out of it.)
- Pickled Onion (easy to make with sugar vinegar and sliced onion)
- Salt and Pepper to taste
- Olive Oil
- Balsalmic Vinegar
- Spinach
- Cook the pasta - while cooking
- Mix Oil, Vinegar, Add shredded chicken, pickled onion diced, tomato, and feta.
- Rise pasta and add to mixture,
- salt and pepper to taste from here - feel free to add other herbs to your liking -
- When I am ready to grab a serving I mix this salad with some fresh spinach -
- If your salad dried out after being in the fridge ad a little more olive oil to the mix before serving.
