Easy German Apple Pancakes
- 4 Eggs
- 1/2 cup all purpose flour
- 1/2 tsp baking powder
- 1 Tbsp sugar
- Pinch salt
- 1 cup milk
- 1 tsp vanilla
- 2 Tbsp melted butter
- 1/8 tsp nutmeg
- 4 Tbsp butter
- 1/2 cup sugar
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 1 large granny smith apple
- Preheat oven to 425F
- Batter
- With plastic knife in food processor, blend first five ingredients 6 on/off turns.
- With machine running add milk gradually. Add vanilla, butter and nutmeg for 3 on/off turns.
- Let stand 30 min or overnight
- Fruit
- With the serrated slicer, slice apples.
- Brush oven proof skillet with melted butter, sprinkle with 1/4 cup sugar, 1/2 tsp cinnamon and 1/8 tsp nutmeg
- Spread apples into pan. Add remaining 1/4 cup sugar. Place over medium high heat until mixture boils.
- Pour batter over apples
- Bake 425 F for 15 minutes then 375F for 10 min
- Serve with maple syrup or powdered sugar.
