Ann Stubbins' Mocha Cake

  1. Grease and flour a tube pan or line with wax paper.
  2. Sift together dry ingredients. Add to shortening and mix together. Add water and vanilla until flour is dampened then beat (use low speed and paddle on your Kitchen Aid) for 2 minutes. Add 3 eggs and 2 squares unsweetened chocolate and beat 1 minute more.
  3. Pour into greased and floured tube pan or 9 x 5 x 3 pan. Bake @ 325 degrees for 65 - 70 minutes or until done. Cool in pan 10 minutes. Sift Confectioners Sugar over top when cool.
