Peanut Brittle

  1. Place sugar, corn syrup, water, salt and peanuts in a 2 quart
  2. microproof bowl or casserole. Cook on HIGH (max. power) for five
  3. minutes, then stir. Cook on HIGH 13 to 15 minutes, or until syrup
  4. separates ilnto threads. This is the hard-crack stage or 300 degrees
  5. on a candy thermometer. Check temperature several times during the
  6. last few minutses. (do not leave thermometer in oven when cooking)
  7. Stir in butter, baking soda and vanilla just until light and bubbly.
  8. Pour onto a greased cookie sheet. Spread. Cool and break into pieces.
  9. Makes 1-1/4 pounds.
  10. Note: you can use dark or light corn syrup. Obviously, the color of
  11. your peanut brittle will differ but both are delicious.
  12. Personal Note: Our microwave is a Sears 600 watt (I think) and we cook
  13. for 14 minutes and it comes out great. If your not sure, check with
  14. a candy thermometer the first time and then just use that elapsed time on
  15. future batches.
