Quick Italian Chicken Bake
- 1-1/4 cups cooked chicken, cut up
- 1 tomato, chopped
- 3/4 cup frozen peas
- 1/2 cup grated Parmesan cheese
- 1/2 tsp. Italian herb seasoning
- 1-1/4 cups reduced fat buttermilk baking mix
- 1 cup skim milk
- 2 eggs
- 2 cups purchased pizza sauce, heated
- Preheat oven to 400u0b0F. Combine first 5 ingredients in a well greased 9 inch pie plate. Combine baking mix, milk and eggs in a bowl and stir with a fork until smooth. Pour over chicken mixture. Bake 35 minutes or until knife inserted in center comes out clean. Serve with heated pizza sauce, if desired.
