Black Beans With Yellow Rice
- BEANS
- 1 pound black beans
- 1 each ham hock, optional
- 1 each onion, chopped
- 1 each green pepper, chopped
- 3 cloves garlic, crushed
- 1 tablespoon olive oil
- bay leaf
- 1 tablespoon vinegar
- RICE
- 1 cup rice
- saffron or curry
- dash chili powder
- 1 pound ground beef
- dash crushed red pepper
- salt and pepper
- Cheese, grated
- 1.tEANS (Day before)
- 2.tinse beans. Soak in cold water overnight; drain. Cover beans with fresh water; add ham hock. Saute onions and green pepper in oil. Add to beans along with garlic, bay leaf, salt and olive oil. Cook all day. Stir in vinegar before serving.
- 3.teason rice water with salt, saffron and chili powder. Cook rice according to directions.
- 4.trown ground beef. Season.
- 5.terve with grated chees
