Low Calorie Blueberry Muffins

  1. Heat oven to 375u0b0.
  2. Grease muffin pan or use foil or paper baking cups.
  3. Thoroughly mix flours, sugar, baking powder and salt in a large bowl.
  4. Beat egg with fork or whisk, in a small bowl. Whisk in milk and butter.
  5. Pour over dry ingredients.
  6. Add blueberries and lemon peel.
  7. Fold in with rubber spatula just until dry ingredients are moistened.
  8. Scoop batter into muffin cups.
  9. Bake 15 to 20 minutes or until lightly browned.
  10. Cool 5 minutes before removing from pan.
  11. Serve hot or warm.
