Southern Toffee Squares

  1. Chop pecans, 1 cup coarse and 1 cup fine for topping. Cream butter, brown sugar, egg yolk, vanilla, salt. Stir in flour and coarsely chopped pecans. Pat mixture into a 10X15X1 inch pan. Bake in a 300 degree oven 25 min. or until light brown and soft to the touch. Turn off oven. Put pan on oven door, sprinkle with chocolate, return to oven, close door, allow chocolate to melt. Remove from oven, spread chocolate to cover top, sprinkle with finely chopped nuts. Allow chocolate to set, then cool. Cut into small squares. Store at room temperature between waxed paped in an airtight container. Makes approx. 30 squares.
