Pumpkin Bread Pudding
- 2 C half & half
- 1 - 15 oz can pure pumpkin
- 1 C packed plus 2 T dark brown sugar
- 2 lg. eggs
- 1 1/2 tsp pumpkin pie spice
- 1 1/2 tsp gr. cinnammon
- 1 1/2 tsp. vanilla extract
- 10 C egg bread cut in 1/2 inch cubes
- 1/2 C golden raisens
- Sauce:
- 1 1/4 C dark brown sugar (packed)
- 1/2 C unsalted butter
- 1/2 C whipping cream
- Preheat oven to 350. Whisk half and half, pumpkin, sugar, eggs, spices and vanilla in a large bowl.
- Fold in bread crumbs then stir in raisens. Place in 11 x 7 inch baking dish. Let stand 15 min. Bake until tester comes out clean (about 40 min.)
- Sauce:
- whisk sugar and butter in heavy med,. saucepan over med. heat until butter melts,. whisk in cream and heat until blended. Serve over warm pudding
