Chick'N Mole And Jazzy Rice
- Rice:
- 1 cup wild rice
- 2.5 c. vegetable broth
- 1 can of diced tomatoes(juice included)
- 2 tsp minced garlic
- 1 TBsp mild taco seasoning
- 1/4 c. white wine
- 1 large onion minced
- 1/2 c green lentils
- Chick'n:
- 1 bag of Quorn brand chick'n pieces
- 1 8oz can of plain tomato sauce
- 1 TBsp unsweetened cocoa
- 2 tsp crushed garlic
- 3 TBsp lemon juice
- 1/8 tsp cumin
- 1/4 tsp chili powder
- 1/2 tsp taco seasoning
- 1/2 tsp chipolte chili flakes
- 1 TB EVOO
- Boil 1.5 cups of broth, wine, garlic, onions and lentils for 10 minutes. Add rice and other ingredient (except tomatoes) simmer covered on medium heat for 15 minutes. Add tomatoes and remaining broth simmer another 15 minutes.
- In separate pan add oil and lightly brown chick'n. add remaining ingredients. Simmer, stirring every 3 minutes, until thickened.
- Serve with mint lemon granita for dessert! (Look for recipe).
